Fish parsnips
Grilled Fish with Parsnip Puree and Lemon Sauce
Ingredients:
To prepare the fish:
2 pieces of white fish fillets (such as sea bass or halibut)
1 tablespoon olive oil
Salt and black pepper to taste
1 teaspoon minced garlic
Juice of half a lemon
To prepare the parsnip puree:
2 large white carrots, peeled and chopped
½ cup cooking cream or milk
1 tablespoon butter
Salt and pepper to taste
To prepare the sauce:
Juice of a lemon
1 tablespoon butter
½ teaspoon Dijon mustard
1 teaspoon honey
A pinch of black pepper
Directions:
To prepare the puree:
Boil the parsnip until tender, then drain and mash with the butter, cream, salt and pepper until smooth.
Cook the fish:
Heat the olive oil in a frying pan, then add the fish pieces seasoned with salt, pepper and garlic.
Grill the fish for 3-4 minutes on each side until browned and cooked through.
Prepare the sauce:
In the same pan, add the butter, lemon juice, mustard and honey, and stir until the sauce is homogeneous.
Serving:
Put the puree in a plate, then place the grilled fish on top and pour the sauce over it.
Garnish with some fresh herbs such as parsley or dill.
